TUNA BURGER WITH SALAD

INGREDIENTS:

  • 2 cans tuna in water (6 oz - chunk light or albacore)
  • 2-3 egg whites
  • Lemon Pepper Mrs. Dash (or other Mrs. Dash flavor)
  • 5-6 cups Romaine Lettuce and/or Spinach Leaves
  • 2 cups chopped raw vegetables - peppers, carrots, cucumbers, broccoli, etc.
  • 3 slices whole wheat or rye bread

    HOW TO MAKE:
    Makes 3 servings.

    This makes a quick, light meal. Drain two cans of tuna and spoon tuna in a bowl. Add two egg whites and a generous amount of Mrs. Dash. Mix thoroughly. Spoon into 3 patties in a Pam-sprayed skillet on medium heat. Cook until both sides are brown--it doesn't take long.

    Serve on slice of toast with lettuce and tomato or by itself, with a salad on the side. Use salad dressing sparingly and choose either a olive oil-based dressing or fat-free creamy dressing.

    NOTES: Albacore is a whiter, drier tuna fish. I prefer its taste, but regular tuna is just fine too. Tuna Burgers can be frozen, if needed, for future meals.
