MINI PIZZA

INGREDIENTS:

  • 12 - 16oz lean meat - Ground Turkey Breast or Extra Lean Hamburger or chopped Chicken Breast
  • 4 whole-grain English Muffins
  • Tomato sauce (with added spices) or low-fat spaghetti sauce
  • Low-fat shredded mozzarella cheese
  • 'Pizza' vegetables (green peppers, onions, mushrooms, even broccoli!)
  • Salad - Romaine Lettuce or Spinach Leaves with chopped raw vegetables such as green peppers, broccoli, cucumbers, etc.

    HOW TO MAKE:
    Brown meat of preference in a skillet and chop finely. If ground meat--drain grease, dump into a colander (i.e. strainer), and rinse with warm water. Pre-heat oven to 350. Slice english muffins in half and spoon about a tablespoon of tomato sauce, meat, vegetables on each half. Sprinkle a little cheese on top. Bake in oven until cheese is melted. Serve with a side salad. Makes 4 servings (2 mini pizzas for each serving).

    NOTES:
    The meat should be divided equally on the 8 english muffins halves. If it starts to spill over, sprinkle the extra on your salad. You still want your whole protein portion! Try Salsa or chopped tomatoes instead of tomato sauce. Try canned chicken or tuna.
