SALSA EGGS OVER BAKED POTATO

INGREDIENTS:

  • 1 medium-sized potato
  • 6 to 8 egg whites
  • Salsa -- as spicy as you like it!

    HOW TO MAKE:
    Stick fork in potato a few times on each side to allow it to cook more evenly. Microwave potato for 4 to 6 minutes. Check half-way through with a fork. When done, the potato should be soft and the fork should easily pierce it.

    While the potato is cooking, beat the egg whites and pour into Pam-sprayed, pre-heated skillet. Thoroughly cook and scramble. Add 1 to 2 tablespoons of salsa and cook for another minute.

    Cut open cooked potato into 4 wedges. Spread Salsa eggs over the top.
    Makes 1 serving.

    NOTES:
    Add a portion of fibrous veggies, like green beans, and this is also great for a quick lunch or supper!
