TURKEY BURGER WITH BAKED FRIES

INGREDIENTS:

  • 1 lb Ground Turkey Breast
  • 1/3 cup oatmeal
  • 1/3 cup chicken broth
  • chopped onion (optional)
  • 4 medium-sized potatoes, cut into 1/4" strips
  • 8 egg whites
  • chilli powder

    HOW TO MAKE:
    Pre-heat oven to 375 degrees. Beat 6 egg whites. Dip 1/4" strips of potatoes in mix and put on a well Pam-sprayed cookie sheet. Sprinkle chilli powder over fries. Bake for 15-20 minutes and then flip. They may stick some. Bake for another 10-15 minutes until 'crisp'.

    While "fries" are cooking, mix Ground Turkey Breast, oatmeal, chicken broth, and 2 egg whites together. Mold into 4 patties. Cook in skillet on medium to high heat. It usually takes about 5 minutes per side.

    1 Turkey Burger, a portion of 'fries' (equal to one medium-sized potato), and a portion of broccoli makes 1 serving.
    Total servings for recipe: 4.

    NOTES:
    I cook up all my meals for the week on the weekend, and then store them in tupperware containers in the freezer. So, I could eat this for supper on Saturday and have three meals all ready for the next week.
