TACO TURKEY RICE

INGREDIENTS:

  • 1 lb Ground Turkey Breast
  • 1 packet Taco seasoning (preferably low-sodium)
  • 2 cups dry instant brown rice
  • 2 cups frozen broccoli or green peppers

    HOW TO MAKE:
    Brown ground turkey breast in a skillet. Drain grease and dump into a colander (i.e. strainer), and rinse with warm water. Put back in skillet and add 1/2 to whole packet of Taco Seasoning with a little water. Mix thoroughly.

    While browning ground turkey, follow directions to cook instant brown rice. When cooked, add to ground turkey and taco seasoning along with the broccoli or green peppers. Simmer for about 15 minutes until vegetables are cooked.

    Makes 4 servings.

    NOTES:
    If you don't like taco seasoning, use Mrs. Dash, or garlic powder and oregano with a little salsa. Be creative. You will probably want to be a more generous on the spices, since ground turkey breast is a little blander than regular hamburger. And remember to store extra servings in individual tupperware containers in the freezer for ready-to-eat meals next week!
