BBQ CHICKEN WITH PINTO BEANS

INGREDIENTS:

  • 1 lb. skinless, boneless chicken breasts (4 - 4oz pieces)
  • BBQ sauce (preferably low-sodium)
  • 2 cups pinto beans (either from a can or cooked from dried beans)
  • 1 cup corn
  • 4 servings of salad made with Romaine lettuce, or other fibrous veggie

    HOW TO MAKE:
    Pre-heat oven to 325 degrees. Pour 2 cups pinto beans and 1 cup corn on the bottom of a casserole dish (big enough to hold four chicken breasts). Remove excess fat from chicken breast, wash, and put on top of pinto beans/corn. Put a tablespoon of BBQ sauce on each chicken breast and cook for 15 minutes. Stir pinto beans/corn to prevent sticking, and then cook for another 15 minutes or until chicken is no longer pink on the inside.

    Make a simple salad with Romaine lettuce or spinach leaves, or microwave 4 servings of your favorite fibrous veggie.

    1 chicken breast, about 3/4 cup pinto beans/corn, and a veggie makes 1 serving.
    Total servings for recipe: 4.

    NOTES:
    You can also just bake the chicken breasts in a pan and cook the beans/corn in the microwave.
