SALSA COD WITH BAKED POTATO

INGREDIENTS:

  • 4 medium-sized potatoes
  • 1.25lb cod (4 - 5oz pieces)
  • Salsa -- as spicy as you like it!

    HOW TO MAKE:
    Stick fork in potatoes a few times on each side to allow them to cook more evenly. Microwave potatoes for 10 to 12 minutes. Check halfway through with a fork. When done, the potato should be soft and the fork should easily pierce it.

    Pre-heat oven to 325 degrees. Put cod in a casserole dish and pour a tablespoon of salsa over each piece. Cod does not take long to cook--about 10-15 minutes at most. Once it's warm on the inside and easily 'flakes', it's done.

    1 piece of cod, 1 baked potato, and a portion of vegetables makes 1 serving.
    Total servings for recipe: 4.

    NOTES:
    Try it with chicken breasts too!
